raw chocolate bark

packed with

cacao regularly features in my recipes as I am forever dipping into it, but honestly a bag lasts for ages! with just three ingredients, this chocolate bark it couldn’t be easier. don’t be deterred by the coconut oil, it is a plant based saturated fat which is used as energy instead of being stored as fat in the body.

makes approx. 15 pieces

  • ½ cup of coconut oil
  • ⅓ cup raw cacao powder
  • 2 tbsp raw honey / maple syrup

toppings I have used (see with a twist for other ideas)

  • ½ cup of roasted hazelnuts (roughly chopped)
  • ½ cup of dates (roughly chopped)

make and do

  • - melt the coconut oil in a large saucepan over a very low heat
  • - add the honey and sieve in the cacao powder
  • - stir with a whisk to ensure it is smoothly combined
  • - taste to check the sweetness at this point
  • - spread onto a small baking tray lined with baking parchment (a small tray will yield a thicker bark)
  • - sprinkle on your toppings
  • - put into the fridge to set for approx. one hour
  • - break into portion size pieces and store in the fridge in an airtight container

with a twist

  • - roasted hazelnuts / sliced almonds / chopped pistachios / pecans
  • - desiccated or flaked coconut
  • - dried sultanas / cranberries / dates / goji berries
  • - cacao nibs
  • - pomegranate seeds
  • - grated orange peel
