This is a really healthy no bake snack, ideal for anyone like myself needs a ‘clean snack’ every now and then to tide them over to lunch or dinner. These keep in the fridge and you can even freeze them if you are really organised!

You can buy medjool dates in good wholefood stores, farmers markets, Supervalu and Holland and Barrett shops.

makes 8 balls

  • ½ cup medjool dates
  • ½ cup of raw peanuts
  • 2 tbsp cacao powder
  • 2 tbsp desiccated coconut

make and do

  • - add the peanuts and dates to the food processor and blitz until they are broken down into a thick paste like consistency
  • - add the cacao and coconut and a small splash of water (1/2 tbsp) and blitz again (the water helps bring the mixture together)
  • - using a teaspoon scoop a small amount of the mixture and roll into a ball in the palm of your hands
  • - repeat
  • - store in a lunch box in the fridge

with a twist

  • - substitute the peanuts with hazelnuts or pecans
