kale crisps

kale is low in calories, high in fibre and fat free - definitely a good place to start when choosing crisps. you might like to hear that kale is higher in iron than beef and higher in calcium then milk. make a big bowl of these for a genuinely ‘good for me’ snack.

makes a large bowl / sharing portion (if you’re feeling generous)

  • 1 large bunch of kale
  • 2 tbsp of olive oil
  • 1 tsp of smoked paprika
  • generous sprinkling of sea salt

optional toppings:

  • curry powder
  • chilli flakes
  • 1 tsp of smoked paprika
  • nutritional yeast (vegan friendly)
  • cayenne pepper

make and do

  • - preheat the oven to 200C
  • - remove the woody stem of the kale and cut into even sized pieces, roughly about 2 inches
  • - put the kale into a large bowl and drizzle over the olive oil and seasoning of choice
  • - get your hands into the bowl and rub the oil and seasoning into the kale until they are fully coated
  • - spread evenly over one or two trays depending how much you have!
  • - roast in the oven for 8-10 minutes or until light brown (keep an eye on these as they cook pretty fast!)
