nuts about butter!

I do love a jar of nut butter, be it hazelnut, cashew or my personal favourite almond butter; it seems to be the must have health food that everyone is eating now. I see that some of the supermarkets like Supervalu are selling the Meridian brand now so there is no excuse not to jump on the band wagon!

This is awesome because not only does it taste delicious it is great for a slow release of energy, its packed with vitamin E for glowing skin and it is an ideal source of plant based protein. It’s a nutritious snack for kids who might be a bit sceptical about eating raw nuts.

Here are some of the ways I like to eat this golden drippy goodness;

  1. Spread it on toast with sliced banana and a sprinkle of cinnamon or cacao powder.
  2. Stir a dollop through a steaming bowl of porridge before adding your fruity topping.
  3. Add a spoonful to your morning smoothie; I especially like to do this with cashew butter.
  4. Chop an apple into wedges. Add a spoonful of the nut butter to each piece and top with a sprinkle of pomegranate jewels or pumpkin seeds.
  5. Spread between oat cakes as a great before gym / on the go snack.
  6. Make a nut butter s’more with almond butter squished between two squares of dark chocolate. Yum.
  7. Use it to make your own granola slices like these chewy fruit & nut slices. 8 Make your own satay sauce with almond butter, lime juice and tamari/soya sauce and pour over noodles or use as a dipping sauce.
  8. Make a nutty salad dressing with almond butter, olive oil, lemon juice, salt & pepper and some water to thin it out. This is delicious with fennel and carrot salad.
  9. When all else fails, eat it straight from the spoon.

If you have your own food processor you might like to try to make your own, I make at least one jar a week and honestly get a bit nervous if I don’t have a supply to hand!
