recipe: pear & mint smoothie

Happy Easter ya’ll! This smoothie dusts off the chocolate comas and welcomes the spring with the freshness of the mint, pear and apple. Made correctly, with a good balance of fruit, vegetables and healthy fats a smoothie has the potential to be a satisfying breakfast keeping you full all the way to lunch. You can also make a batch of this and share it with family, house mates or anyone who will dare drink the ‘green stuff’ as a healthy shot of goodness.

I sometimes make smoothies the night before when I have a busy morning, apart from an occasional slight change in colour depending on the ingredients they keep really well and guarantee a good start to the day. Smoothies are really kind to your digestive system as essentially the blender has commenced a lot of the digesting for you, enjoy.

  • 1 large pear
  • ½ apple
  • 2 inch piece of cucumber
  • small handful of mint
  • 2 tbsp coconut yoghurt (or natural yogurt)
  • water / ice cubes - enough for desired consistency
